Parmesan Crusted Chicken
3 pieces of bread
1/4 - 1/3 cup of butter
2-3 cloves of garlic
1/2 teas Oregano (dried or fresh)
1/2 teas Basil (dried or fresh)
1/2 teas Thyme (dried or fresh)
1/4 cup grated parmesan cheese
Salt and Pepper
You can make your own bread crumbs like I did. Put 3 pieces of bread on a pan in a 200 degree oven for about an hour. The bread can sit in the oven for an hour or so more after you turn it off. Use the the ends of the bread if you have any! Break the bread and put into a food processor for crumbs.
Add the following spices to the bread crumbs: Oregano, Basil and Thyme. If you have fresh that is even better.
Put about 1/4 cup of butter into a saucepan with 2-3 cloves of minced garlic. As soon as the butter boils, remove from heat. Dip each chicken piece into the butter/garlic and then dip into the bread crumb mixture. Sprinkle with parmesan cheese.
Put on a foil lined cookie sheet for 1 hr. @ 350 degrees.
